Oatmeal Cakes: approx. 1 cup left over oatmeal, 2 eggs, 1/4 c. Coconut flour, 1 Tbs. maple syrup & 1/4 tsp baking powder. They fell apart but they taste good topped with a slather of peanut butter & a bit of maple syrup.
